Mediterranean Orzo Salad with Shrimp

This mouthwatering Mediterranean Orzo Salad checks all the boxes on it's own, and becomes a light and satisfying summer sensation with the addition of all-natural shrimp, cooked fresh by you right before serving.
1 pack Unseasoned Simply Shrimp
1 cup uncooked orzo
1 (10 ounce) package grape or cherry tomatoes, halved
1 english or hothouse cucumber, halved and chopped
¼ cup pitted Kalamata olives, halved
½ cup crumbled feta
¼ cup tablespoons thinly sliced red onion
¼ teaspoon dried oregano
2 tablespoons olive oil
2 tablespoons red wine vinegar
Salt & pepper to taste
Chopped fresh parsley optional, to taste
Boil two pots of water. In one, cook the orzo according to package directions, or about 7-10 minutes for al dente. Drain and rinse with cold water.
while orzo is cooking, drop Unseasonsed simply shrimp in the other pot of boiling water and cook according to package directions.
For the dressing
whisk together dried oregano, olive oil, and red wine vinegar. season with salt and pepper to taste.
Build the salad
add orzo, tomatoes, cucumber, red onions and olives to a large bowl and toss to combine. add about half the dressing and toss again.
top with fresh cooked shrimp, crumbled feta and fresh chopped parsley. drizzle additional dressing over the top or serve on the side
